Dark Chocolate Fondant Recipe

Dark Chocolate Fondant Recipe (Serves 2)

Preparation time: 30 minutes – plus two hours cooling 
Cooking time: 12 minutes 


150g Unsalted butter
150g Dark 70% chocolate
3 Whole eggs
3 Egg yolks
150g Soft brown sugar
120g Plain flower
2 Tablespoons cocoa powder


In a large mixing bowl, melt together butter & dark chocolate until smooth, add soft brown sugar and keep on the heat for 5-10 minutes until the sugar is mostly melted in the mix

Combine your whole eggs with the additional three egg yolks and slowly add them to the chocolate mix, whisking everything together as you do

Combine your plain flour and cocoa powder, ensure the mixture is sieved first. Now add to your chocolate and egg mix, ensuring no pockets of flour have formed

Line your moulds with butter and cocoa powder

Put your fondant mix in a pipping bag and pipe into the moulds

Let the mixture set in the fridge for two hours. Ten minutes before the end of cooling time, preheat the oven to 200 degrees

Cook in the oven for 12 min. Take the moulds out of the oven and carefully place each mould upside down on a plate, removing the mould from the fondant

Serve with a scoop of ice cream and a scattering of berries, if you like.
